2nd speaker: I like my convictions undiluted, same as I do my bourbon.

I don't know who the speaker is, but I'm going to guess that the movie is Jezebel.

Star, you're correct that the movie is "Jezebel".

Here's a clue for the 1st speaker - forcing our heroine to waltz in her red dress

Here's a clue for the 2nd speaker - very good at fighting duels (also the lead actress's favorite actor)

Then the first speaker must be Henry Fonda and the second speaker must be George Brent.

Absolutely right, Star.  Great job. It's your turn.

I remember this quote because I recently watched a dvd of this film.  I believe it's Allen Jenkins as "Dick" talking about "Vivian" played by Ann Dvorak in the movie "Three on a Match".

Once again the answer came to me when I wasn't on the computer, and your latest clue cinches it.  It has to be The Letter, right?

You're absolutely right, Star.  That opening sequence in THE LETTER is one of the most memorable in film. It's your turn, Star.

I forgot to mention that the speaker was James Stephenson.  And now on to the next quote:

Speaker #1:  What are you doing now?

Speaker #2:  I'm thinking.  I'm thinking of you without these clothes.

Speaker #1:  Open your eyes at once!

And it sounds like something a French man would say. LOL
