Johnny Depp was fantastic in "Donnie Brasco," which is just a great movie. It utterly captures the Seventies, and Al Pacino gave one of his best performances in it.

 

"Some Like It Hot" is one of the greats.

 

I suppose "Gosford Park" counts as an undercover movie, with the movie actor pretending to be one of the servants.

If we are including all actors/characters for whom pretending to be someone they're not is critical to the role:
