Breyer's Natural Vanilla is made that way.I know some of their other flavors are similar but some do have corn syrup and other additives.

I believe you should eat them only in moderation. They have strong anti-inflammatory properties which can interfere with medications.

 

Sweet potatoes and radishes make good chips also by the same method as beet chips.

 

Lazy Vareniki have only farmer's cheese, egg and flour so they are a health food as well as being delicious! :)

Oh that's good to know about kale, sansfin! I'll try the other choices, though beets are the only food I don't really like much, along with liver.

 

I make regular potato chips all the time and have been meaning to make sweet potato chips for a long time. I've found that potatoes crisp better if you put parchment on your cookie sheet before laying out the slices of potato. Zucchini is WONDERFUL cooked the same way, in thin slices though it never really gets crisp.

 

I would love to make lazy vareniki's but I can't eat wheat flour anymore. I haven't yet found a perfect substitute. I bet farmer's cheese and eggs are pretty good together though. :D

A common substitute for wheat flour is:

 

6 cups fine-texture white rice flour

2 cups potato starch

1 cup tapioca flour

2 tablespoons Xanthum gum

 

All are commonly available at large supermarkets and nearly all health food stores.

 

I know two people who are on gluten-free diets and they both say this is an excellent substitute for wheat flour:

Jackie and Miss G... around here we are big on icecream.. especially the QT. But personally.. I am getting to the point where I want something more "zing-y" ha. So I am leaning more to the sorbets (especially RASPBERRY!!) I have never tried making it at home.. but it doesn't SOUND like it would be too hard, so I looked online Jackie.. alas.. the recipes I kept finding had (light)corn syrup. But then I had a stroke of genius.. ha.. or just a passing thought.. HA) and decided to google "granitas" and found this: http://www.foodnetwork.com/recipes/follow-that-food/raspberry-granita-recipe/index.html (and if you don't like raspberry.. maybe they have other flavors. Would be a good way to get a nice frozen treat in the summer.. and still be able to control the calories (and the sugar too.. because I bet you would not have to use QUITE so much sweetener as they have here.. you might even be able to use some other sort of sweetner like honey or something) Hmmm... Raspberry granita.. I am thinking we need to go the store because alas.. I appear to be FRESH OUT of raspberries!! (Mr. Grey.. sit down.. no tongue sticking out smiley faces IF you please!!) :D

OH my gosh, thank you, Sansfin and Ro! That flour substitute looks perfect. I have Rice flour and potato starch here, but no Xantham gum or Tapioca starch. I am trying tostay off of starchy foods anyway, but when I absolutely have to have something sweet, baked or bready, I will definitely keep this in the house.

 

And Ro, I have a bunch of fruit in the house right now, and a little ice cream maker shoved in the back of my freezer that I keep meaning to use. That recipe looks so easy!

 

I also have a bunch of cream so I could make my own ice cream (but I haven't, too lazy).

I believe the Xantham gum is for texture of baked goods. I believe it would not be needed if making vareniki or Lazy Vareniki.

 

Traditional vareniki are not very starchy as there is little dough when compared to filling.

She makes it look so easy! I can imagine the mess and the disaster after I made them! but I can see this as one of those once a year baking projects like I used to do, before flour became an issue for me.

 

What happens if instead of boiling them, you baked them? Or is that never done?

I eat other dairy products with little ill effects, but ice cream does a number on me like no other---regardless of whether it is "limited ingredient" or organic.

 

I found a recipe for peach gelato that uses mascarpone which I may try one day, however when it comes to ice cream/gelato, I am a CHOCOLATE loyalist all the way. Fruitty flavors don't interest me much.

I go back and forth (sometimes depending on the seasons, I think) because I DO so love my chocolate now and then. But OH me, there are times when I will just so happily reach for a handful of berries.. or a ripe, juicy peach. It does look pretty tasty!! (and lately I have been leaning more toward the stronger "darker" chocolates.. so the "bittersweet" angle sounds appealing too.) ha. Go figure.. I USED to be a "milk chocolate" only kinda gal.. but lately I find I am liking things that are not as typical for me. (ha.. my taster has gotten out of WHACK in my old age). Lately I only want the "sour" hard candy OR "bitter" chocolate" Good grief.. what next?? Will I give up Dr. Pepper for Mt Dew??? OH perish the THOUGHT!! :D

I will not suggest such a thing but I have heard of people using Won-Ton wrappers so they would not have to make their own dough. I have seen gluten-free Won-Ton wrappers in the market. I have never tried them.

There are at all times perversions. ;)

 

The word vareniki means: "boiled object". It is common to fry cold ones which are left-over.

 

I have had ones which are baked. I am sorry to say I have no recipe. They were larger but I do not know if that is a requirement for them. I think I remember them being meat or potato. I do not remember ones baked which were cheese or fruit.

OK, sansfin, point taken. I will make sure I boil them, not bake. I am just dreaming of pie crust right now, which I can't have!

 

On the other hand, I am never one to go the easy route when baking. It almost never works so no won ton wrappers for me. The dough looks pretty simple. of course, if there's anyone who could ruin it, it would be me. :D

I tried a thing based on my dim remembrance that it was a regional thing and I found this recipe for you:

I believe it would not be necessary for you to make your own ricotta.

 

I have heard of people who use potato flour as a sole replacement for wheat flour. I believe they use half the amount. Perhaps it is by weight?

oh you are killing me with this pastry! I have not tried much baking yet with flour substitutes. I'll have to give it a try, but I simply don't know the amounts of each flour or anything. I have just been going without, which is better for my waistline anyway.

I use soy sauce quite often in cooking so I don't think it is that. I read online that ice cream is one of the worst foods for your health and digestion (this from the anti-dairy tribe) so who knows, maybe I am psychosomatic about it! Anyway, there are many other things I have recently had to give up, so I know that it is probably for the same reason.

 

That sorbet looked lovely, Ro, but I've tried such things before and really wasn't happy. Chocolate needs substance, i.e., cream or milk for me to enjoy it as a frozen dessert.

 

Jackie, it's funny you mention soy because one of the most awful things I ever tried was ice cream made with soy. YIKES! It solidified my belief that if something is made with healthy substitutes---I'm not going to like it. :D

I was just throwing soy out there as a possible solution. I bet you aren't psychosomatic, for years I've had problems but never knew the ingredients that made me sick. Once I ticked them off the list, and it's only been recently that I finally found out, it has made me feel so much better~! It's well worth going without when you realize that those things that you are allergic to are pretty much poisoning your body.

Sansfin, I'm going to send that video to my mom, she LOVES cooking/baking with cottage cheese.

 

when it comes to pancakes, if I make them homemade i use just three ingredients: flour, eggs, milk. nothing more. of course, these are for the huge, pan-sized kind more common in Europe, not the little, stackable "hot cakes" they know in America. jam or cocoa are my favorite toppings for them. :)

Nutella is YUMMY!

 

I have a big carton of cottage cheese in the fridge, I'll have to try these, Sansfin! I'm out of jam and preserves though.I think I'll make my own, I have some nectarines that might be nice as an accompaniment. I hope rice flour doesn't stick to the pan.
